Zesty Lemon Garlic Shrimp Stir-Fry

Ingredients:

  • 1 lb (450g) large shrimp, peeled and deveined
  • 2 cups broccoli florets
  • 1 red bell pepper, thinly sliced
  • 1 cup snap peas
  • 3 tablespoons olive oil, divided
  • 4 cloves garlic, minced
  • Zest of 1 lemon
  • Juice of 1 lemon
  • 2 tablespoons low-sodium soy sauce (or tamari for gluten-free option)
  • 1 tablespoon honey or maple syrup
  • 1/4 teaspoon red pepper flakes (adjust to your spice preference)
  • Salt and black pepper to taste
  • Fresh cilantro or green onions for garnish (optional)

Instructions:

  1. In a small bowl, combine the lemon zest, lemon juice, soy sauce, honey (or maple syrup), red pepper flakes, and a pinch of salt. Mix well to create the lemon garlic sauce.
  2. Heat 2 tablespoons of olive oil in a large skillet or wok over medium-high heat. Add the shrimp and sauté for 2-3 minutes per side until they turn pink and opaque. Remove the cooked shrimp from the skillet and set aside.
  3. In the same skillet, add the remaining 1 tablespoon of olive oil. Add the minced garlic and stir-fry for about 30 seconds until fragrant.
