As the crisp autumn air begins to wrap around me, I’m diving headfirst into a week-long culinary adventure that captures the essence of comfort and flavour. From the foundational richness of crafting Chicken Stock to the intricate harmony of Classic Chicken Noodle Soup, Creamy Tomato Basil Soup, Thai Coconut Curry Soup (Tom Kha Gai), Spicy Black Bean Soup, and Butternut Squash and Apple Soup, I’m immersing myself in a symphony of soups that warm my heart and nourish my soul.

Day 1: The Foundation – Crafting Chicken Stock and Classic Chicken Noodle Soup

Every delicious bowl of soup starts with a solid foundation. On Day 1, I’m rolling up my sleeves to craft the cornerstone of flavour – Chicken Stock. This liquid gold will infuse each subsequent soup with a rich, hearty base that sets the stage for a week of culinary delight. As the stock simmers away, I’m already envisioning the soul-soothing soups it will create. But that’s not all! On Day 1, I’m also bringing to life the timeless classic- Chicken Noodle Soup. Tender chunks of chicken, perfectly cooked noodles, and a medley of vegetables create a harmony of flavours that harken back to cherished moments around the family table.


Day 2: Creamy Tomato Basil Soup

Day 2 brings a burst of vibrant colour and robust flavour with Creamy Tomato Basil Soup. Ripe tomatoes dance with fragrant basil in a velvety embrace that’s both elegant and comforting, with a secret ingredient to make even the most sophisticated consumers ask for seconds. As you’ll get this soup on the table in under 30 minutes, I can’t help but appreciate the simplicity of ingredients that come together to create a bowl of pure delight.

Day 3: Thai Coconut Curry Soup (Tom Kha Gai)

Embarking on a global culinary journey, Day 3 introduces me to the exotic allure of Thai Coconut Curry Soup, also known as Tom Kha Gai. The dance of coconut milk with the fragrant lemongrass, and fiery Thai chilies from the red curry paste creates a symphony of flavours that awaken my senses. This soup is a true testament to the magic that happens when ingredients from different corners of the world unite in harmony.


Day 4: Spicy Black Bean Soup

On Day 4, I’m indulging my taste buds with the hearty and robust Spicy Black Bean Soup. A medley of black beans, vegetables, and a kick of spice converge in a bowl that’s as satisfying as it is delicious. Each spoonful warms me from the inside out, making it the perfect antidote to a cool autumn evening.

Day 5: Butternut Squash and Apple Soup

As the week comes to a close, I’m celebrating the flavours of fall with Butternut Squash and Apple Soup. Day 5 brings the sweetness of roasted squash and the tartness of apples together in perfect harmony. The result is a velvety soup that captures the essence of the season in every spoonful.

  • 3 whole chickens (or about 4-5 pounds of skin-on, bone-in chicken)

Vegetables:

  • 6 large carrots
  • 6 celery stalks
  • 4 onions
  • 8-10 ripe tomatoes
  • 4 cloves of garlic
  • Fresh herbs: basil, cilantro, rosemary, thyme, parsley
  • 2 apples
  • 1 medium butternut squash
  • 1 lime

Spices and Seasonings:

  • Peppercorns
  • Salt
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
