As the festive season unfolds and the scent of Christmas fills the air, it brings back memories of time-honoured traditions and beloved family recipes. Among the treasured recipes in my family’s culinary repertoire are the classic Bird’s Nest Cookies – a nostalgic treat that’s been a part of my Christmas tradition for as long as I can remember.
Birds Nest Cookies 🪹
Ingredients
- 1 cup butter, softened
- ½ cup white sugar
- 2 eggs, separated yolks and whites
- 2 cups all-purpose flour
- 2 cups chopped pecans
Directions
- Separate the eggs. Chop the nuts finely.
- Cream together 1 cup softened butter and sugar. Add the yolks, and beat well. Add the flour, and mix well.
- Make small balls out of dough. Roll balls in egg white, and then in the nuts. Place balls on greased cookie sheets, and press centre of cookie with thumb. Bake at 350 degrees F (175 degrees C) for 8 minutes. Press centre of cookie again, bake until lightly browned 4 to 6 minutes. Cool cookies on racks.
- Fill the middle with your favourite jam.
