Creamy Corn Chowder Recipe

Ingredients:

  • 4 cups fresh corn kernels (about 5-6 ears of corn)
  • 1 onion, chopped
  • 2 potatoes, peeled and diced
  • 2 carrots, peeled and diced
  • 3 celery stalks, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • 1 cup heavy cream*
  • 2 tablespoons butter
  • Salt and pepper to taste
  • Fresh chives, chopped, for garnish

Instructions:

  1. In a large pot, melt the butter over medium heat. Add the chopped onion, diced carrots, diced celery, and minced garlic. Sauté until the vegetables soften and the onion becomes translucent.
  2. Add the diced potatoes and corn kernels to the pot. Stir to combine the ingredients.
  3. Pour in the vegetable broth, ensuring that the vegetables are covered. Add the bay leaf and dried thyme. Bring the mixture to a gentle boil, then reduce the heat to a simmer. Cover the pot and let it cook for about 20-25 minutes, or until the potatoes are tender.
  4. Remove the bay leaf from the pot and discard it.
  5. Use an immersion blender to partially blend the soup, leaving some chunks of vegetables for texture. Alternatively, you can transfer a portion of the soup to a blender, blend until smooth, and then return it to the pot.
  6. Stir in the heavy cream, allowing it to meld with the flavors. Simmer the soup for an additional 5-10 minutes.
  7. Season the chowder with salt and pepper to taste. Adjust the seasoning according to your preference.
  8. Ladle into bowls. Garnish each bowl with chopped fresh chives.

Notes:

  • For a dairy-free option, you can use a plant-based heavy cream alternative.
  • Sub 1/2 cup lactose free sour cream for a lactose free option.
  • You can get very inventive with the garnish- rather than chives, how about roasted corn nibblers? Or crunchy prosciutto chips? Or even a fresh bright herb oil? Get creative with it!

For Crockpot:

  • Transfer the sautéed vegetables and corn, along with the remaining ingredients (except heavy cream and chives), to your Crockpot.
  • Cover and cook on low for 6-8 hours or on high for 3-4 hours. Before serving, stir in the heavy cream and let it heat through.
  • Season with salt and pepper as needed and garnish with fresh chives.

For Instant Pot:

  • Select the sauté function on your Instant Pot and sauté the chopped onion, diced carrots, diced celery, and minced garlic until the onion becomes translucent.
  • Add the diced potatoes and corn kernels to the pot. Stir to combine.
  • Pour in the vegetable broth, ensuring the vegetables are covered. Add the bay leaf and dried thyme.
  • Close the lid, set the Instant Pot to manual high pressure, and cook for 8 minutes. Once the cooking is complete, perform a quick release.
  • Follow steps 4-7 from the main recipe, stirring in the heavy cream, seasoning, and garnishing with chives.
