Coconut Clusters with Liquid Sweetener

Ingredients:

  • 2 cups unsweetened coconut chips
  • 2 tbsp chia seeds
  • 1/4 cup pumpkin seeds
  • 1/4 cup sunflower seeds
  • 2-3 tbsp hemp hearts
  • 1/4 cup honey, maple syrup, or brown rice syrup
  • 1 tbsp melted coconut oil
  • Pinch of salt

Instructions:

  • Preheat oven to 300°F (150°C). Line a baking sheet with parchment paper.
  • Mix coconut chips, chia seeds, pumpkin seeds, sunflower seeds, and hemp hearts in a large bowl.
  • Warm honey/maple syrup slightly, mix with coconut oil, and pour over the dry ingredients. Stir to coat evenly.
  • Spread mixture in a thin, even layer on the baking sheet. Press down lightly.
  • Bake for 15-20 minutes, stirring halfway, until golden and crispy.
  • Cool completely on the tray, then break into clusters. Store in an airtight container.

  • 2-3 tbsp water

  • In a small saucepan, dissolve sugar in water over medium heat, stirring until clear. Cool slightly, then mix in coconut oil.
