Coconut Clusters with Liquid Sweetener
Ingredients:
- 2 cups unsweetened coconut chips
- 2 tbsp chia seeds
- 1/4 cup pumpkin seeds
- 1/4 cup sunflower seeds
- 2-3 tbsp hemp hearts
- 1/4 cup honey, maple syrup, or brown rice syrup
- 1 tbsp melted coconut oil
- Pinch of salt
Instructions:
- Preheat oven to 300°F (150°C). Line a baking sheet with parchment paper.
- Mix coconut chips, chia seeds, pumpkin seeds, sunflower seeds, and hemp hearts in a large bowl.
- Warm honey/maple syrup slightly, mix with coconut oil, and pour over the dry ingredients. Stir to coat evenly.
- Spread mixture in a thin, even layer on the baking sheet. Press down lightly.
- Bake for 15-20 minutes, stirring halfway, until golden and crispy.
- Cool completely on the tray, then break into clusters. Store in an airtight container.

- 2-3 tbsp water

- Spread mixture in a thin, even layer on the baking sheet. Press down lightly.
