Monday Cherry Magic: Cherry-Stuffed French Toast

Hello, fellow cherry lovers,

Welcome to the start of our week-long celebration of Okanagan cherries! If you’ve been following along, you know that we have an exciting week ahead filled with cherry-infused recipes.

What better way to kick off our week than with a breakfast that feels like a warm hug? Today, I present to you Cherry-Stuffed French Toast, a dish that combines the classic comfort of French toast with the delightful tang of fresh cherries. It’s like a symphony of flavours that dances on your taste buds, brightening up your Monday morning.

Now, it’s time to bring that joy to your breakfast table. Here’s what you’ll need:

Ingredients:

  • 8 slices of bread
  • 1 cup pitted and chopped Okanagan cherries
  • 8 oz cream cheese, softened
  • 2 eggs
  • 1 cup milk
  • 1 tsp vanilla extract
  • 2 tbsp sugar
  • 1/2 tsp cinnamon
  • Butter for frying
  • Optional toppings: powdered sugar, syrup, extra cherries

Instructions:

  1. Create the Cherry Filling: In a bowl, mix the chopped cherries with the softened cream cheese. Blend until you have a smooth and slightly chunky mixture.
  2. Prepare the Egg Mixture: In another bowl, whisk the eggs, milk, vanilla extract, sugar, and cinnamon until smooth.
  3. Stuff the Bread: Spread a generous amount of the cherry-cream cheese mixture between two slices of bread, as if you’re making a sandwich.
  4. Dip and Fry: Heat butter in a skillet over medium heat. Dip your stuffed bread into the egg mixture, ensuring both sides are coated, and fry until golden brown on both sides.
  5. Serve: Top your Cherry-Stuffed French Toast with powdered sugar, syrup, or extra cherries, if desired.

This Cherry-Stuffed French Toast isn’t just a meal; it’s a memory, a feeling, a connection to a time when cherries were more than just a fruit. They were a symbol of summer, a playground delight, and a link to the world around us.

Join me tomorrow for another cherry delight as we continue our journey through Okanagan cherry season in style. Trust me, you won’t want to miss what’s coming up!

With cherry-filled joy,

Chef Sarah
