Ingredients:
- 1 cup (226g) unsalted butter, softened
- 1/2 cup (100g) granulated sugar
- 2 teaspoons vanilla extract
- 2 cups (240g) all-purpose flour
- 1 cup (120g) finely chopped pecans
- 1/4 teaspoon salt
- Additional granulated sugar for coating (optional)
Instructions:
- Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Add the vanilla extract to the butter-sugar mixture and mix until well combined.
- Gradually add the flour, chopped pecans, and salt to the mixture, stirring until a crumbly dough forms. Use your hands to bring the dough together if needed.
- Shape the dough into small balls or use a cookie scoop to portion the dough.
- Optional: Roll each ball of dough in additional granulated sugar for a slightly sweet and crunchy coating.
- Place the shaped dough balls onto the prepared baking sheets, leaving space between each for spreading.
- Gently flatten each ball with the bottom of a glass or your fingertips to create a cookie shape.
- Bake in the preheated oven for 12-15 minutes or until the edges are lightly golden.
- Remove from the oven and let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
